Serbian Bean Soup

This is a delicious and healthy soup, almost like a stew. It's very nutritious and hearty. Makes a great lunch with a couple of slices of toasted baguette or some good country bread.

Ingredients:

1 lrg can of white beans in juice
1 small can of peeled tomatoes w/juice (hand crushed)
1 lrg onion, peeled and diced
2 Tbsp tomato paste
2 slice of bacon (thick cut)
1 lrg Turkey Kielbasa, sliced
Salt & Pepper to taste
Paprika powder
Cayenne pepper

Peel and dice the onion and sauté in 1 Tbsp olive oil and a tsp butter. Finely dice the bacon and add to the mix and dust it liberally with the Paprika powder. Add the hand crushed tomatoes with the juice and the entire can of beans, including the juice also. Add the sliced Kielbasa and the tomato paste. Give it a good stir to mix all the ingredients and perhaps add some water or veggie broth if it's too thick. It shouldn't be too thin, however, more like a stew. Season to taste with salt and pepper and some cayenne pepper to give it some heat and let the soup simmer on medium-low for about 45 minutes.

If you'd like to freeze a portion, let it cool down first.
